Chia Seed Pudding, Who Would Have Thought!

Found a new little treat this week, that I am loving, especially during these last hot summer days in Salida.  There is nothing like a cool treat with some berries on top!  This is a great vegan desert to impress your vegan friends!

Vanilla Cinnamon Chia Seed Pudding

  • 1 cup raw, unsalted cashews, soaked and rinsed
  • 3 1/2 cups filtered water
  • 1/4 cup organic maple syrup
  • 1 tablespoon vanilla extract or 1 whole vanilla bean
  • pinch of salt
  • 3/4 cup whole chia seeds
  • 1/4 teaspoon or more of cinnamon

Soak cashews for a couple of hours, rinse.  Place cashews, water, maple syrup, vanilla or bean and salt into a high-powered blender and blend until and creamy.  I have a blendtec and did mine for about a minute.  Pour mixture in a bowl, add the chia seeds and cinnamon and whisk together, for about a minute.  Transfer to a glass storage container.  I use mason jars with lids.  Place in the refrigerator to thicken for at least 2 hours.  I gave mine a little shake about 15 minutes after I put them in fridge to make sure the chia seeds stayed suspended.  Garnish with berries or eat plain as a mid-day snack.
